Simply Recipes Meal Plan: October 2018, Week 4

Here's your meal plan for October Week 4! Are you into fall cooking yet?! If not, we've got Broccoli Cheddar Casserole, Swedish Meatballs, Sweet Potato Stew, and more!

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes contributors and recipe testers!

October creates mixed emotions when you live in the center of Texas. On one hand, the calendar tells you it’s autumn — as does the “pumpkin spiced” everything — but when the temps are still in the high 90’s, you find it hard to get into the fall spirit.

For my meal plan this week, I’m going to conjure the ghost of autumn. How so? With meals I can double and freeze for the holidays, as well as hearty dishes perfect for cooler temps.

By now, you should see turkeys available in your grocery stores so grab one while you’re on your grocery run. No need to wait until Thanksgiving to have turkey — there are plenty of recipes on Simply Recipes that put those birds to good use! October is also sweet potato and broccoli season, so I’m making use of them in this week’s plan.

Sustenance Stew

This Sustenance Stew with Sweet Potatoes and Swiss Chard is a bold way to incorporate the season into your dinner. This vegetarian stew sits atop cauliflower (also in season) rice. It’s so hearty and filling I don’t miss the meat at all.

Pressure Cooker Turkey with Dijon Gravy

My first turkey dish of the season (and an amazing use of it at that) is this Pressure Cooker Turkey with Dijon Gravy. Using the pressure cooker means that something that should take hours is done in less than one hour. While it’s cooking, I’m going to prepare mashed potatoes and a garden salad. Dinner under an hour is never a bad thing, is it?

Broccoli Cheese Casserole - an easy broccoli casserole you'll love!

  Casseroles are a fall thing, in my opinion; and this casserole is the best -- hands down. Broccoli Cheddar Casserole made with sharp cheddar cheese and broccoli that’s in season, is not only a hit with kids, but adults as well. Double the recipe, freeze, and you’ll have a Thanksgiving or Christmas side ready to go.

Swedish Meatballs

Swedish Meatballs are another recipe that you can double and freeze for your holiday meals. Serve these atop buttered egg noodles and you have a twist on the typical meatballs and mashed potatoes.

Baked Shrimp with Tomatillos

During the colder months (wishful thinking, remember?), I like to excite my palate with bright flavors. This Baked Shrimp with Tomatillos recipe is fun recipe for the middle of autumn because, to me, it evokes warmer months. I serve this along with warmed corn tortillas for our family movie night.

    Elise and staff, thank you for the recipes ! I am going to try the broccoli cheddar casserole ! The meal planning tips are a lifesaver, I’m getting married in 2 weeks !! I enjoy cooking, but don’t do it every day ! Lucky, we both enjoy cooking together !
    Are there any freezing guidelines on simply recipes ? I Will look, thanks again to all who comment and contribute, the help is invaluable !!
